Love Stuffed Potatoes
- 4 Baking Potatoes
- 1 shallot
- 1 red pepper
- Lemon Love
- Feta Crumbles
- Olive Oil
- Salt and Pepper
Rub potatoes with olive oil, prick with a fork and bake at 350 for about 45 minutes (the goal is to have a little “give” when you squeeze the potato, not have it “done.”).
While the potatoes are baking, peel half the shallot. Dice the shallot into small pieces and saute until soft in about 1 teaspoon of the olive oil.
Have half of the red bell pepper cleaned and diced into little jewels.
Remove potatoes from oven and let cool to touch. Cut the potatoes in 1/2, gently take a spoon and remove the potato from the peel. Save the peel as a shell (it is best to leave a “frame” of potato inside the shell).
Mix the potato, shallots, red bell pepper together with Lemon Love. Start with about a 1/4 cup of Lemon Love and add more if necessary. The mixture should be creamy but not soupy.
Scoop ingredients into the potato shell and bake for 10 minutes. Remove from the oven and switch oven to broil. Sprinkle the feta crumbles on the top of the potatoes and pop under the broiler until golden.
